Why do sycamore trees stink?

I often walk through my neighborhood, and, especially in humid weather or after it rains, the sycamore trees smell AWFUL. Even my kids call them "stink trees". If you don't believe me, take the leaves of a sycamore tree and crush them in your hand; it smells like a dirty butt.
